Lasagna is something I have heard during my college days. One of my friend’s mom used to make them and send it for college. It used to be yum. After that I never got to eat Lasagna anywhere. Then after we came to Cairo three years back when I started to bake I got Lasagna recipe from my sister in Munich and tried it. It was good. Initially I used to mince the chicken breast and then do the sauce. This would dry out the chicken easily. After that once I tried to poach the chicken and then flake it and used for the chicken Bolognese sauce it worked well.
The best in this lasagna is that it has little cheese as we add thick white sauce instead of cheese in every layer. But the taste is not compromised instead it takes lasagna to a different level. YUMMY …………

This Lasagna recipe is made in a 10×10 inch square glass dish. The recipe is made with chicken and not minced meat. If u wish u can replace chicken in the recipe with any other meat as per your choice.

Ingredients
Chicken Bolognese
- Olive oil – 1 tbsp.
- Onion – 2 medium sized (Chopped finely)
- Garlic cloves – 5 (minced)
- Tomatoes – 4 big sized
- Tomato Paste – 1tbsp.
- Chicken breast – 3 to 4 pieces
- Pepper – 2tsp
- Chili flakes – 1 1/2 tbsp.
- Dry Italian herbs – 1 tbsp.
- Salt – As needed
White Sauce
- Milk – 500 ml / 2 cups
- Butter – 30g / 1/3 rd cup
- All Purpose Flour – 40g / 1/2 cup
- Pepper – 2 tsp.
- Salt – As needed
Assembling Lasagna
- Lasagna sheets (preferably ready to cook in the oven)
- Olive oil (for greasing the dish)
- Bolognese chicken sauce
- White sauce
- Cheese as desired
METHOD
Making Bolognese Chicken Sauce
- First Poach the chicken, that is, cook them in boiling water for 10 mins or until cooked.
- Strain the water. Now flake the chicken to small strands.
- Take Tomatoes and make a hole in the center and blanche them in boiling water until the skin peels off.
- Peel the skin and puree the tomatoes in the blender.
- Now heat olive oil in the pan and sauté garlic and then onion with salt.
- After the onion becomes translucent add poached and flaked chicken pieces.
- Now add tomato puree and tomato paste along with chili flakes, pepper, dry herbs and salt.
- Cook the sauce for few mins and switch off the stove.
- The Bolognese chicken sauce or mix is ready.
Making White Sauce
- Take a pan and heat the butter.
- After it gets melted add the flour and stir without lumps.
- Now add milk and whisk it to form a smooth mixture.
- Heat the same until u get a thick sauce.
- Add salt and pepper.
- White sauce is ready.
Assembling the Lasagna
- Preheat the oven to 180 degree C.
- Take the baking dish and grease it with olive oil.
- Spread the Bolognese chicken sauce as the bottom layer.
- Then add the lasagna sheets above that.
- Now spread the Bolognese chicken sauce again.
- Above that add the white sauce evenly.
- Spread the lasagna sheets at the top of that.
- Now repeat the layers. Bolognese sauce, white sauce and then add cheese as desired.
- Bake Lasagna in the preheated oven for 25 to 30 mins. You will see the cheese on top gets a golden colour after it is done.
